Baked Cod With Summer Veggies

  Ingredients List:



  1. Pre-heat oven to 400*f/200*c
  2. Parboil potatoes for 12-15 minutes and cut into 1" cubes
  3. Place potatoes in baking pan and season
  4. Chop onion and pepper and add to pan along with okra
  5. In a bowl, combine pesto, crushed tomatoes, half the olive oil and oregano
  6. Pour 3/4 of mixture into baking pan and mix well with the veggies
  7. Add cod on top of veggies and pour remaining mixture over cod
  8. Bake uncovered for about 30 minutes


Notes & Tips:
  • Makes 4-6 servings
  • Serve with feta cheese and Greek crusty bread
  • Fresh or frozen cod can be used
  • Substitute any whitefish instead of cod
