Easy Coconut Shrimp

  Ingredients List:

  • 1 lb. jumbo shrimp
  • 2 cups coconut flour
  • 2 cups unsweetened shredded coconut
  • 2 eggs
  • 1 cup coconut oil
  • Salt & pepper to taste


  1. In a frying pan, pre-heat coconut oil on med-hi heat
  2. Clean, devein and butterfly shrimp
  3. Beat eggs and put in a bowl
  4. Season coconut flour and place in shallow dish
  5. Place shredded coconut in another shallow dish
  6. Dredge shrimp in flour
  7. Coat in beaten eggs
  8. Coat with coconut and fry
  9. Fry about 2-3 minutes per side or until desired doneness
  10. Place in paper towel lined plate immediately after frying to catch excess oil


Notes & Tips:
  • Recipe can be x2, x3
  • Can be made ahead and frozen
  • Add chili for added spice
  • Serve with dip of choice
