Fasolakia Yiahni From Hios | Stewed Green Beans With Feta & Mastiha

  Ingredients List:

  • 1 onion
  • 1/3 cup Greek extra virgin olive oil
  • 4 cups green beans
  • Big bunch of parsley
  • 1 cup crushed tomatoes
  • 1 cup water
  • 100g feta cheese
  • 2 oz. mastiha liquor
  • Salt & pepper to taste
 

Method:

  1. Chop onion and in a large pot saute in olive oil until translucent
  2. Add green beans, crushed tomatoes, water, mastiha and chopped parsley
  3. Bring to a boil, reduce heat and simmer uncovered for 20 minutes
  4. Remove from heat and crumble in feta

 

Notes & Tips:
  • Makes 4-6 servings
  • Serve with crusty Greek bread and Kalamata olives
  • Omit feta for vegan option or use vegan sharp cheese
