Gnocchi with Bacon and Asparagus In A Duck Fat Sauce

Gnocchi with Bacon and Asparagus

  Ingredients List:

  • 3 slices smoked bacon
  • 1 heaping tbsp. duck fat
  • Bunch of asparagus
  • 3 green onions onion
  • Bunch of parsley
  • 40g Greek kefalograviera cheese
  • Salt & pepper to taste


  1. Pre-boil water for gnocchi and have ready
  2. Chop and render  bacon in a large pan
  3. Add duck fat and continue to brown bacon as fat renders
  4. Chop asparagus into 1/2" pieces and add to pan
  5. Start cooking gnocchi (about 4-5 minutes)
  6. While gnocchi is cooking, chop green onions and parsley
  7. Once gnocchi floats to top of pot, strain and add to pan
  8. Add parsley and green onion and stir well
  9. Sprinkle with kefalograviera just before serving


Notes & Tips:
  • Makes 4-6 servings (2 Greek portions)
  • If you can't find duck or chicken fat, use butter and Greek extra virgin olive oil
  • Garnish with parsley and kefalograviera
  • In the tragic event you can't find kefalograviera, you can substitute parmesan, asiago or any other sharp grating cheese
