Greek Apple Cake

Ingredients:
  • 3 apples (any type)
  • 1/2 cup melted butter
  • 2 cups sugar
  • 2 tsp. ground cinnamon
  • 5 eggs
  • 1 cup self rising flour
  • 1 tsp. baking powder
  • 1/3 cup raisins
  • 3/4 cup walnuts

Method:

  1. Pre-heat oven to 375*f/180*c
  2. Peel and core apples and cut into 1/2 slices
  3. In a mixing bowl combine half the sugar and the butter and melted mix well
  4. Once thoroughly combined, spread butter mixture onto 12"  baking pan (see video)
  5. Arrange apples in a fan pattern on the bottom of pan (see video)
  6. In the same mixing bowl, add the remaining ingredients and mix well
  7. Pour over apples and spread for even batter layer
  8. Bake for 45-50 minutes using the toothpick test to check for doneness
Notes & Tips:
  • Makes 8-12 pieces
  • Allow to sit for 30 minutes prior to cutting
  • Can also be served with ice cream or whipped cream
