Linguine with Burnt Mizithra Cheese and Olive Oil

  Ingredients List:

  • 500 g linguine (or pasta of choice)
  • 1 cup Greek extra virgin olive oil
  • 2 tbsp. Crisco or other shortening
  • 1-1/2 cups grated mizithra cheese
  • Salt & pepper to taste


  1. Cook pasta to desired doneness
  2. In a saucepan, combine olive oil and shortening.
  3. Heat until shortening has melted and olive oil is hot to almost the smoking point
  4. Drain pasta and add 3/4 of the grated mizithra mixing well
  5. Place pasta in serving platter
  6. Drizzle hot olive oil over pasta and mizithra so you hear the sizzle
  7. Sprinkle remaining mizithra over hot pasta and serve immediately

  • Add chili peppers or sriracha for added heat
  • If you can't find mizithra, use any hard salty cheese
