Mediterranean Roasted Leg of Lamb

  Ingredients List:

  • Leg of lamb (bone-in)
  • 1/3 cup Greek extra virgin olive oil
  • 2 tbsp. sun dried tomatoes
  • 1 tbsp. tomato paste
  • 1 tbsp. dried rosemary
  • 6 garlic cloves
  • Zest of 1 lemon
  • Salt & pepper to taste


  1. Pre-heat oven to 400*f/200*c
  2. In a food processor, add all the ingredients and work until a loose paste consistency
  3. Place lamb in roasting pan and evenly spread rub all over lamb
  4. Cook uncovered @ 400*f for 75-90 minutes or until desired doneness


Notes & Tips:
  • Allow roasted lamb to rest for 15 minutes before serving
  • Serve with Greek salad, rice, veggies and bread
  • Reserve bone for lamb stock
