Soutzoukakia with Potatoes Yiahni


  Ingredients List:



  1. Pre-heat oven to 450*f/220*c
  2. Place ground beef in a large mixing bowl and set aside
  3. In a food processor, combine 2 onions, mint, 4 cloves garlic and dice
  4. Add mixture and eggs to ground beef, season and mix well
  5. Form into oblong shaped meatballs and place onto parchment paper lined tray
  6. Bake meatballs for 30 minutes @ 450*f
  7. While meatballs are baking, in a large pot chop onion and remaining garlic and saute in olive oil until translucent
  8. Add the cumin, cinnamon and bayleaves and continue to cook for 3 minutes on med-high heat
  9. Add crushed tomatoes and water and stir well
  10. Peel and half potatoes and add to sauce
  11. Once soutzoukakia are done and have been removed from oven, REDUCE oven temp. to 400*f/200*c
  12. Add the baked soutzoukakia into the pot, stir well and sprinkle with oregano
  13. Cover pot and bake for 1 hour

  • Makes 6-8 servings
  • Quarter potatoes if they are large
  • Serve with feta cheese and/or salad
  • Perfect as a make-ahead meal
