Vegetarian Baked Rigatoni

  Ingredients List:

  • 450g rigatoni pasta
  • 1 onion
  • 2 garlic cloves
  • 28oz can  crushed tomatoes
  • Can of water
  • 1/4 cup chopped basil
  • 1 tsp. dried Greek oregano
  • 1/2 cup parmesan
  • 450g ricotta cheese
  • 450g mozzarella cheese
  • Bunch of parsley
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. Cook pasta to slightly underdone
  3. In a large pot, chop and brown onion and garlic in olive oil
  4. Add crushed tomatoes and water and bring to a boil
  5. Stir in oregano, basil, parmesan, ricotta and 1/2 the mozzarella
  6. Add drained pasta to baking dish and add sauce
  7. Stir well to combine
  8. Sprinkle remaining mozzarella over mixed pasta and bake uncovered for 30-40 minutes 

 

Notes & Tips:
  • Makes 6-10 servings
  • Allow to rest for 30 minutes before serving
  • Can be frozen before or after baking
  • Add optional chili for added heat
  • Serve with a side salad and more cheese for garnish
