Avocado Hummus

  Ingredients List:

  • 2 cups cooked chickpeas
  • 1/3 cup lemon juice
  • 2 tbsp. minced garlic
  • 1/2 cup tahini
  • 3 ripe avocados
  • 1 jalapeno pepper (optional)
  • Parsley for garnish
  • 3/4 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Add all ingredients into a food processor except for the parsley
  2. Wiz up until a smooth creamy consistency
  3. Adjust creaminess with olive oil

 

Notes & Tips:
  • Chill in refrigerator at least 1/2 hour before serving
  • Garnish with olive oil, parsley, paprika or cayenne pepper
  • Serve with crackers, veggies or pita
