Baked Green Beans With Cod

baked green beans with cod

  Ingredients List:

  • 4 cod filets
  • 1 onion
  • 1 garlic clove
  • 2 cups green beans
  • 1-1/2 cups crushed tomatoes
  • 1/4 cup chopped  parsley
  • 1/2 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. In a pan, slice and saute the onion and garlic for 5 minutes
  3. Add green beans and crushed tomatoes and continue to cook for 5 more minutes
  4. Add chopped parsley and stir well
  5. In a baking dish, add 1/2 the green been mixture to the bottom
  6. Place the cod filets over the green beans and cover with remaining green bean mixture
  7. Bake uncovered for 25-35 minutes

 

Notes & Tips:
  • Makes 4 servings
  • Serve with feta cheese and Greek crusty bread
  • Any white fish can be used
