Creamy Pumpkin Soup With Olive Oil

  Ingredients List:

  • 1 onion
  • 2 garlic cloves
  • 2 lbs. pumpkin
  • 6 cups water
  • 2 chicken or veggie  stock cubes
  • 1/4 cup Greek extra virgin olive oil
  • 1 cup cream
  • Salt & pepper to taste
 

Method:

  1. In a large pot, slice and saute onion until translucent
  2. Chop and add garlic for 3 more minutes
  3. Chop pumpkin into 1" cubes and add to pot
  4. Cook pumpkin for 5 minutes
  5. Add water and stock cubes
  6. Bring to a boil, reduce heat, cover and simmer for about 20 minutes
  7. Remove from heat and either puree with immersion blender or food processor
  8. Add cream and stir well to combine 

 

Notes & Tips:
  • Makes 4 main servings or 8 appetizer portions
  • Recipe can be doubled or tripled
  • Can be made ahead and frozen
  • Substitute yogurt for sour cream for lighter option
  • Garnish with olive oil as well
