Greek Braised Rooster Kapama

greek braised rooster kapama

  Ingredients List:

  • 1 whole rooster | Capon
  • 1/2 cup Greek extra virgin olive oil
  • 1 onion
  • 2 garlic cloves
  • 2 whole cloves
  • 1 tsp. cinnamon
  • 1 cup dry Greek red wine
  • x2 28 oz. cans crushed tomatoes
  • x2 28 oz. cans water
  • Salt & pepper to taste


  1. Cut up rooster into pieces (or have your butcher do it)
  2. In a large stock pot, brown rooster pieces in olive oil
  3. Once rooster has browned, remove from pot and set aside
  4. Chop onion and garlic and saute in same oil as rooster
  5. Add cloves and cinnamon and continue to cook for 3 more minutes 
  6. Deglaze with red wine and cook for another 3 minutes
  7. Add crushed tomatoes and water and bring to a boil
  8. Add rooster back into pot, bring to a boil, reduce heat, cover and simmer for 1 hour


Notes & Tips:
  • Makes 8-12 servings
  • Serve with #5 spaghetti or bucatini
  • Garnish with mizithra cheese
  • If you can't find rooster, just use chicken
  • Substitute parmesan for mizithra
  • Excellent make-ahead meal. Prepare rooster ahead and just make the pasta before serving
