Greek Chicken & Lemony Oregano Potatoes On The Stove Top

  Ingredients List:



  1. In a large pot, brown chicken thighs in olive oil
  2. Once browned, remove chicken from pot
  3. Peel and cut up potatoes into 1" pieces and brown in same pot as chicken
  4. Chop onion and add to browning potatoes
  5. After about 5 minutes, add chicken back into pot and add just enough water to cover chicken
  6. Add oregano and stir to combine
  7. Cook partially covered until potatoes are fork tender and chicken is completely cooked through
  8. Squeeze the juice of the lemon and agitate pot (see video)
