Greek Lemon Oregano Potatoes On The Stove Top

  Ingredients List:



  1. In a pot, chop and saute onion in olive oil
  2. Chop garlic and add to onions
  3. Peel & dice potatoes and eggplant and add to pot
  4. Cook for about 10 minutes
  5. Add oregano and enough water to almost cover the potatoes in the pot
  6. Bring to a boil, reduce heat and simmer until potatoes are cooked
  7. Remove from heat and stir in the juice of the lemon
  8. Stir well and serve


Notes & Tips:
  • Makes 4-6 servings
  • Serve with bread and/or Greek salad
  • To reheat, add about 1/4 cup water
