  Ingredients List:



  1. Peel and boil potatoes
  2. Pre-heat pan with olive oil
  3. In a large bowl, mash potatoes and add oregano, flour, chopped onions, fennel, chopped gruyere, lemon zest and season to taste
  4. Divide potato mixture into 4 equal parts  and form into patties
  5. Fry until golden brown on both sides
  6. Place onto paper towel lined plate immediately after fruing to absorbe excess oil


Notes & Tips:
  • Makes 4-8 fritters
  • Serve with yogurt, tzatziki or side salad
  • Can easily be frozen
