Greek Style Calamari Pasta

  Ingredients List:

  • 20 oz. can calamari
  • 1 onion
  • Bunch of parsley
  • 1 garlic clove
  • 28 oz. can crushed tomatoes
  • 1 litre water
  • 450g short pasta
  • 1/4 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. In a large pot, chop and saute onion & garlic  in olive oil
  2. Add tomatoes and water and bring to a boil
  3. Add pasta and calamari and cook until pasta is done
  4. Turn off heat, chop parsley and stir into calamari pasta

 

Notes & Tips:
  • Makes 4-6 servings
  • Serve with Greek salad and bread
  • Suitable for Greek lent
  • Garnish with cheese (optional for non lent version)
