Greek Style Marinated Salmon & Rice Bake

  Ingredients List:

  • 1 lb. salmon
  • 2 lemons
  • 2 cups rice
  • 4 cups water
  • 2 tbsp. roasted red pepper paste
  • Bunch of dill
  • 30g feta cheese
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste


  1. Pre-heat oven to 375*f/180*c
  2. In a plastic bag, add 1/4 cup olive oil, the zest of 1 lemon, the juice of 2 lemons and dill
  3. Mix well and place salmon in bag to marinate
  4. In a Dutch oven, add rice, water, remaining olive oil  and red pepper paste and mix well to combine
  5. Place marinated salmon over rice and bake  uncovered for 25-35 minutes or until the rice has completely absorbed the liquid
