Hasselback Pork Tenderloin

  Ingredients List:



  1. Pre-heat oven to 375*f/180*c
  2. Cut slits into pork 3/4 of the way through, 1/2" apart
  3. Cut feta into 1" square pieces about a  1/4" thick
  4. Place in slits of pork
  5. Cut red pepper into same sized pieces as feta and stuff into pork slits as well
  6. Drizzle with olive oil
  7. Sprinkle with fennel and rosemary
  8. Finely chop garlic and rub over pork
  9. Add olives around pan
  10. Roast for 45-60 minutes or until pork is cooked through

  • Serve with potatoes, rice or Greek salad
