Roasted Beet Dip

  Ingredients List:

  • 4 beets
  • 1 whole head of garlic
  • 1/4 cup Greek extra virgin olive oil
  • 2 cups strained Greek yogurt
  • 1 tsp. red wine vinegar
  • Salt & pepper to taste


  1. Pre-heat oven to 400*f/200*c
  2. Peel and place beets in aluminum foil
  3. Cut off top of garlic head and nestle in beets
  4. Drizzle with olive oil and season to taste
  5. Close foil tightly and roast for 1 hour
  6. In a food processor add beets, peeled roasted garlic, olive oil, yogurt & vinegar
  7. Process to combine well


Notes & Tips:
  • Allow to chill in refrigerator for at least 1/2 an hour to set up
  • Serve with pita bread, veggies, crackers or chips
  • Chili flakes can be added for extra spiciness
  • Perfect for holidays or any get-together
  • Can be made ahead
