Spinach and Feta Monkey Bread

  Ingredients List:

  • x2 500g strained Greek yogurt
  • x2 500g yogurt containers self rising flour
  • 300g spinach
  • 1/4 cup chopped dill
  • 1 egg
  • 300g feta cheese
  • 200g grated  kefalograviera (Greek gruyere) 
  • Bunch of parsley
  • 100g feta cheese
  • Kalamata olives
  • 4 tbsp. Greek extra virgin olive oil
  • Salt & pepper to taste


  1. Pre-heat oven to 400*f/200*c
  2. In a mixer, combine the flour, yogurt, 3 tbsp. olive oil and mix well to make into dough
  3. In another mixing bowl, add spinach, feta, half the gruyere and dill
  4. Season and mix well
  5. Grease baking pan with remaining olive oil
  6. Roll dough into 2" balls and flatten
  7. Place about a tbsp. of spinach filling in the centre of the  flattened dough and close into ball again
  8. Place into baking pan
  9. Sprinkle grated gruyere between layers of dough balls
  10. Repeat steps 6-9 until dough and filling are finished
  11. Bake for 35-45 minutes


Notes & Tips:
  • Serve warm or at room temperature
  • Allow monkey bread to cool for 15 minutes after baking before trying to remove from the pan
  • Cheeses can be substituted 
  • Can be frozen before or after baking
