2-Ingredient Mediterranean Meatballs & Eggplant

2-ingredient meatballs

  Ingredients List:

  • 1 lb. lean ground beef
  • 2 tbsp. roasted red pepper paste
  • 1/2 tsp. dried Greek oregano 
  • 1/4 cup Greek extra virgin olive oil
  • 1 eggplant
  • 1-1/2 cups crushed tomatoes
  • 1/2 tsp. allspice
  • Kasseri cheese for garnish
  • Parsley for garnish
  • Salt & pepper to taste
 

Method:

  1. In a bowl, combine ground beef & pepper paste and form into 1" meatballs
  2. In a large skillet, brown meatballs in olive oil
  3. Cube eggplant into 1" pieces and add to meatballs
  4. Cook for about 5 minutes stirring  often
  5. Add crushed tomatoes, oregano and allspice
  6. Stir to mix well and simmer for about 25 minutes

 

Notes & Tips:
  • Makes about 12-15 meatballs
  • Serve with rice, pasta, couscous or bread
  • Add chili flakes for optional added spice
