20 Minute Greek Style Pasta Dinner

  Ingredients List:

  • 200g pasta
  • 1/4 cup Greek extra virgin olive oil
  • 1 onion
  • 1 tbsp. tomato paste
  • Chili flakes (optional)
  • 1-1/2 cups crushed tomatoes
  • 6 cups water
  • 1/4 cup chopped basil
  • 1/3 cup mizithra cheese
  • Salt & pepper to taste
 

Method:

  1. In a large pot, chop and saute onion in olive oil for 5 minutes
  2. Add tomato paste and continue to cook for another 3 minutes
  3. Add crushed tomatoes and water and bring to a boil
  4. Add pasta and stir regularly until done
  5. Remove from heat and add mizithra 

 

Notes & Tips:
  • Makes 2-3 servings
  • Recipe can easily be doubled
  • Can be frozen
  • If you can't find mizithra, substitute with grating cheese of choice
