Roast Leg of Lamb

  Ingredients List:

  • Leg of Lamb (bone-in)
  • 1/4 cup Greek extra virgin olive oil
  • 2 tbsp. onion powder
  • 2 tbsp. paprika (sweet, smoked or spicy)
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f / 200*c
  2. Place leg of lamb in parchment lined roasting pan
  3. Drizzle half the olive oil, paprika, onion powder and salt & pepper on 1 side
  4. Turn leg over and repeat step 3
  5. Roast on middle rack of oven for 1-1/2 to 2 hours or until desired doneness

 

Notes & Tips:
  • Allow to rest for 20-30 minutes
  • Serve with steamed veggies, rice, potatoes and/or salad
  • Cook for 1-1/2 hours for blushing pink, 2 hours for well done Greek-style
