Asparagus Sfoungato | Greek Asparagus Quiche

  Ingredients List:

  • 1 lb. asparagus
  • 4 green onions
  • 1 sweet red pepper
  • 1 long eggplant
  • 6-8 mushrooms
  • 1 tsp. fennel seeds
  • 1/2 tsp. dried thyme
  • 1 tbsp. paprika
  • 4 eggs
  • 1/4 cup cream (optional)
  • 60g feta cheese
  • 1/4 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Chop asparagus into 1/2" pieces and dry fry in a medium skillet
  2. Add olive oil, chop greek  onions, mushrooms,  eggplant & 1/2 the red pepper and add to pan
  3. Saute for 5 minutes
  4. Add fennel seed, thyme & paprika and continue to saute for another 3 minutes
  5. Pre-heat oven to broil
  6. Beat the eggs, season and add over sautéing veggies
  7. Crumble feta over eggs
  8. Cook on stovetop for 3 minutes
  9. Place remaining asparagus and red pepper on top and place in the oven to broil
  10. Ready when feta is melted and top asparagus and red pepper is slightly charred 

 

Notes & Tips:
  • Makes 4-6 servings
  • Feta could be substituted for cheese of choice
  • Serve with a Greek side salad & bread
  • Can be frozen and re-heated
  • Perfect for breakfast, lunch or brunch
