Baked Greek Biftekia with Potatoes

Ingredients List:
- 2 lbs. lean ground beef
- 3 lbs. potatoes
- 1 onion
- 4 cloves garlic
- Bunch of parsley
- 1/3 Greek extra virgin olive oil
- 2 tsp. cumin
- 1 tbsp. dried basil
- 1 tbsp. dried mint
- 1 tbsp. dried oregano
- 1 egg
- 750ml crushed tomatoes
- 1 tbsp. tomato paste
- 1/2 cup water
- Salt & pepper to taste

Method:
- Pre-heat oven to 400*f / 200*c
- Peel and half potatoes.
- Place in baking pan and set aside
- Chop onion, garlic, and parsley and add to ground beef
- Add egg, dried mint, basil and cumin
- Salt & pepper to taste and mix ground beef to combine well
- Form ground beef mixture into uniform patties and place on top of potatoes
- In a separate bowl, combine crushed tomatoes, tomato paste and water and mix well
- Pour over beef patties and potatoes
- Drizzle with olive oil, sprinkle with dried oregano and salt & pepper to taste
- Bake for 1 hour and 15 minutes @ 400*f

Notes & Tips:
- If potatoes are large, quarter them for even cooking
- Serve with a side salad or veggie of choice
- Makes 6 servings
