Baked Greek Biftekia with Potatoes

Biftekia with Potatoes

  Ingredients List:

  • 2 lbs. lean ground beef
  • 3 lbs. potatoes
  • 1 onion
  • 4 cloves garlic
  • Bunch of parsley
  • 1/3 Greek extra virgin olive oil
  • 2 tsp. cumin
  • 1 tbsp. dried basil
  • 1 tbsp. dried mint
  • 1 tbsp. dried oregano
  • 1 egg
  • 750ml crushed tomatoes
  • 1 tbsp. tomato paste
  • 1/2 cup water
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f / 200*c
  2. Peel and half potatoes.
  3. Place in baking pan and set aside
  4. Chop onion, garlic, and parsley and add to ground beef
  5. Add egg, dried mint, basil and cumin
  6. Salt & pepper to taste and mix ground beef to combine well
  7. Form ground beef mixture into uniform patties and place on top of potatoes
  8. In a separate bowl, combine crushed tomatoes, tomato paste and water and mix well
  9. Pour over beef patties and potatoes
  10. Drizzle with olive oil, sprinkle with dried oregano and salt & pepper to taste
  11. Bake for 1 hour and 15 minutes @ 400*f

 

Notes & Tips:
  • If potatoes are large, quarter them for even cooking
  • Serve with a side salad or veggie of choice
  • Makes 6 servings
