Baked Mustard Parmesan Chicken

  Ingredients List:

  • 8 chicken thighs (bone in, skin on)
  • 1/3 cup mustard
  • 1/3 cup grated parmesan
  • Pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. Place chicken in baking pan skin side down
  3. Brush with mustard
  4. Sprinkle parmesan over chicken
  5. Turn over chicken and repeat steps 3 & 4
  6. Bake uncovered for about an hour

 

Notes & Tips:
  • Makes 4-6 portions
  • Garnish with thyme or rosemary
  • Serve with Greek salad, potatoes, veggies or rice
