Baked Orzo & Mussels

baked orzo & mussels

  Ingredients List:

  • 1 onion
  • 1/4 cup Greek extra virgin olive oil
  • 2 garlic cloves
  • 1 tsp. cinnamon
  • 1/2 tsp. cumin
  • 1 clove
  • 2 cups orzo
  • 1-1/2 cups crushed tomatoes
  • 8 cups water
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. In a large pot, brown chopped onion and garlic in the olive oil
  3. Saute onion and garlic for 6 minutes and then add the cinnamon, cumin & clove and continue cooking for another 3 minutes
  4. Add orzo and heat orzo for about 3 minutes
  5. Add crushed tomatoes and water and bring to a boil
  6. Once boiling, bake in oven for 30 minutes uncovered
  7. Once orzo has absorbed most of the liquid, add the mussels vertically about 1-1/2" apart
  8. Bake for another 10 minutes or until all the mussels have opened

  • Makes 4-6 servings
  • Suitable for lent
  • Garnish with parsley
