Baked Sausage with Summer Vegetables

  Ingredients List:

  • 4 pork sausages
  • 1 onion
  • 1/4 cup Greek extra virgin olive oil
  • 2 tsp. minced garlic
  • 2 bay leaves
  • 2 rosemary sprigs
  • A few sprigs thyme
  • 2 carrots
  • 1 green pepper
  • 2 celery stalks
  • 1 eggplant
  • 1 zucchini
  • 2 cups green beans
  • 1 tsp. cumin
  • 2 tbsp. tomato paste
  • 1-1/2 cups crushed tomatoes
  • 2 cups Greek dry red wine
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 350*f/160*c
  2. Chop sausage into bite sized pieces and in a large pot brown in olive oil
  3. Chop veggies and add them to pot and cook for 5 minutes
  4. Add herbs and spices and continue to cook for 5 minutes
  5. Add tomato paste, crushed tomatoes and wine
  6. Bring to a boil stirring regularly
  7. Cover pot and bake for 2 hours

 

Notes & Tips:
  • Makes 4-6 servings
  • Serve with feta cheese & fresh Greek bread
  • Can be frozen and reheated for service
  • Omit sausage for vegan option
  • Use any sausage you like
