Baked Spaghetti In Greek Meat Sauce from Filiatra

Ingredients List:
- 1/2 lb. lean ground beef
- 1 onion
- 4 tbsp. Greek extra virgin olive oil
- 1/2 tsp. cinnamon
- 1/2 tsp. cumin
- 1 clove
- 1 bay leaf
- 1-1/2 cups crushed tomatoes
- 1 cup water
- Sriracha sauce (optional)
- 450g spaghetti
- 80g gouda cheese
- 80g emental cheese
- 80g kefalograviera cheese
- Salt & pepper to taste

Method:
- Pre-heat oven to 425*f/220*c
- Cook spaghetti to desired doneness
- In a large sauce pan, brown ground beef in olive oil
- Chop onion and garlic and add to browning beef
- Season to taste
- Once ground beef is browned and onion is translucent, add cinnamon, cumin, clove and bay leaf to pan
- Add optional sriracha for added spice
- Cook for 3-4 minutes
- Add crushed tomatoes and water to pan and simmer for 15-20 minutes or until sauce starts to thicken
- Add cooked spaghetti to sauce and mix well
- Place in baking dish and spread evenly
- Grate cheeses over spaghetti mixture and bake for 25-35 minutes or until golden brown and blistered on top

- Makes 4 portions
- Garnish with mizithra or kefalotyri
- Serve with Greek salad
- Can be frozen before or after baking
- Recipe can be doubled or tripled
- Use any pasta you have on hand
- Omit ground beef for vegetarian option
