Beet And Greek Yogurt Salad With Walnuts

  Ingredients List:

  • 1 cup strained Greek yogurt
  • 1 lb. cooked  beets
  • 3 tbsp. red wine vinegar
  • 1/3 cup walnuts
  • 1/4 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. In a food processor add the yogurt with half the beets, vinegar, olive oil and 3/4 of the walnuts
  2. Process until smooth
  3. Add remaining beets and pulse in food processor just until beets are small chunks
  4. Pour onto serving dish, drizzle with olive oil and garnish with parsley and walnuts

Notes & Tips:
  • Recipe can be doubled
  • Walnuts can be omitted
  • Add chili flakes for added spice
  • Serve with meats, fish or poultry
  • Can also be served as a dip with bread, crackers or veggie sticks
