Chicken Tourlou | Greek Ratatouille With Chicken

  Ingredients List:

  • 2 lbs. chicken (your choice of cut)
  • 1/3 cup Greek extra virgin olive oil
  • 1 onion
  • 1 garlic clove
  • 2 carrots
  • 1 eggplant
  • 2 potatoes
  • Bunch of parsley
  • Bunch of dill
  • 4 cups green beans
  • 1 cup crushed tomatoes
  • Water as needed
  • Salt & pepper to taste


  1. In a large pot, brown chicken in olive oil
  2. Once chicken has browned, remove from pot and set aside
  3. Chop onion and garlic and saute in same pan as chicken
  4. Chop carrots, potatoes  and eggplant and add to pot
  5. Cook veggies on stovetop for 5 minutes
  6. Chop dill and parsley and add to pot along with the green beans and crushed tomatoes
  7. Return browned chicken to pot and add enough water to just cover the chicken
  8. Bring to a boil, reduce heat, cover and simmer for 1 hour


Notes & Tips:
  • Makes 4-6 servings
  • Can be made vegan without chicken
  • Serve with fresh Greek bread and feta cheese
  • Can easily be frozen or made ahead
  • Veggies can be substituted for your choice
