Chickpea and Orzo Avgolemono Soup

  Ingredients List:

  • 1 litre of water
  • 1 tbsp. chicken base/cube
  • 1 can chickpeas
  • 1/2 cup orzo
  • 3 eggs
  • Juice of 1 lemon
  • Bunch of parsley 
  • Salt & pepper to taste


  1. In a sauce pan, bring water to a boil
  2. Add chicken base
  3. Once chicken base has completely dissolved, add chickpeas and orzo
  4. Cook until orzo is done
  5. In a bowl, beat eggs and add lemon juice
  6. Remove soup from heat and slowly temper hot liquid with egg mixture (see video)
  7. Once lemon-egg mixture has come to a fairly high temperature, slowly add into soup pot stirring constantly


Notes & Tips:
  • Makes 4-6 servings
  • If using ready-made stock, start at step 3
  • Substitute rice for orzo or any other small pasta
  • Freezes really well
  • DO NOT rush the tempering step to avoid egg curdling
