Chickpea and Orzo Avgolemono Soup

Ingredients List:
- 1 litre of water
- 1 tbsp. chicken base/cube
- 1 can chickpeas
- 1/2 cup orzo
- 3 eggs
- Juice of 1 lemon
- Bunch of parsley
- Salt & pepper to taste

Method:
- In a sauce pan, bring water to a boil
- Add chicken base
- Once chicken base has completely dissolved, add chickpeas and orzo
- Cook until orzo is done
- In a bowl, beat eggs and add lemon juice
- Remove soup from heat and slowly temper hot liquid with egg mixture (see video)
- Once lemon-egg mixture has come to a fairly high temperature, slowly add into soup pot stirring constantly

Notes & Tips:
- Makes 4-6 servings
- If using ready-made stock, start at step 3
- Substitute rice for orzo or any other small pasta
- Freezes really well
- DO NOT rush the tempering step to avoid egg curdling
