Creamy Baked Mashed Potatoes with Cheese

  Ingredients List:

  • 4 lbs potatoes
  • 2 cups sour cream
  • 250g cream cheese
  • 2 sticks of butter + a little extra for the top
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. Peel and boil potatoes until soft
  3. Drain and place boiled potatoes into large bowl and mash
  4. Add sour cream, butter and cream cheese
  5. Stir to mix well
  6. Pour mashed potatoes into baking dish
  7. Top with a few knobs of butter and bake for 45 minutes to an hour or until brown and blistered on top

 

Notes & Tips:
  • Allow to stand for 20-30 minutes before serving
  • Recipe can be halved or doubled as needed
  • Can be made ahead and heated for service
  • Can easily be frozen
  • Garnish with rosemary or parsley
