Creamy Vegetarian Bow Tie Pasta

creamy vegetarian bow tie pasta

  Ingredients List:

  • 200g bow tie pasta
  • 2 garlic cloves
  • 1 cup mushrooms
  • 1 cup chestnuts
  • Bunch of parsley
  • 1/4 cup Greek extra virgin olive oil
  • 2 tbsp. strained Greek yogurt
  • 2 tbsp. capers
  • Salt & pepper to taste


  1. Cook pasta to desired doneness
  2. In a food processor, add garlic, mushrooms, chestnuts, 2 tbsp. olive oil and chop until fine
  3. In a large skillet, add remaining olive oil and saute the chopped mixture for about 5 minutes
  4. Add the yogurt along with about 1/2 cup of the starchy pasta water and capers
  5. Stir well to thoroughly mix and continue to cook for another 5 minutes
  6. Add cooked pasta and mix well
  7. Add grated cheese and chopped parsley


Notes & Tips:
  • Makes 2 servings
  • Recipe can be be made for 1 or doubled or tripled
  • Serve immediately
  • Add optional chili flakes for added heat
  • Substitute any pasta of choice. Long or short
  • Walnuts can be substituted for the chestnuts
