Dolmadakia Avgolemono

Ingredients List:

  • 1/2 lb lean ground beef
  • 1/2 cup rice
  • 1 onion
  • 1/3 Greek extra virgin olive oil
  • Bunch of dill
  • Bunch of parsley
  • Bunch of mint
  • Salt & pepper to taste
  • 2 eggs
  • Juice of 1-2 lemons

Method:

  1. In a large mixing bowl combine all the ingredients and 4 tbsp. olive oil except for the eggs and lemon juice.
  2. Salt & pepper to taste
  3. Roll out grape leaves individually and fill with approx. 1 tbsp. of meat and rice mixture
  4. Roll up grape leaves (see video)
  5. Place in wide pot and cover with 1-inch of water, salt to taste and drizzle with olive oil
  6. Place plate or lid over rolled dolmadakia in pot to weigh down
  7. Cook covered over med-low heat for approx. 45 minutes
  8. Once dolmadakia are done, remove from pot leaving remaining cooking liquid
  9.  In a mixing bowl scramble eggs, add lemon juice and mix well
  10. VERY SLOWLY add hot cooking liquid from pot to egg and lemon mixture stiring constantly. Continue to add hot liquid into egg mixture
  11. Once egg and lemon mixture is thoroughly warmed, add to remaining cooking liquid in pot.
  12. Now you can either place cooked dolmadakia into lemon-egg mixture in pot or simply pour over plated dolmadakia
