Easy Baked Feta Cheese Dip

  Ingredients List:

  • 1 garlic clove
  • 1 onion
  • 100g kefalograviera cheese
  • 1 egg
  • 1 tsp. paprika
  • 1/8 tsp. parsley
  • Bunch of parsley
  • 450g feta cheese
  • 1/4 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Set oven to high broil
  2. Finely chop onion and garlic, and saute in half the olive oil
  3. Once onion is translucent, set aside
  4. In a food processor, combine feta, half of the graviera, egg and parsley and olive oil and blend until smooth
  5. Drizzle a tbsp. of olive oil into baking dish before pouring in dip
  6. Pour dip into baking dish and smooth
  7. Grate nutmeg and remaining graviera cheese over dip and broil for 4-6 minutes or until top is charred and bubbly

 

Notes & Tips:
  • Serve immediately
  • Serve with veggies, pita or crackers
  • Substitute graviera with any other sharp cheese
  • Recipe can be halved or doubled
  • Can be frozen
  • Add olive oil slowly during blending to avoid adding too much
