Method:

  1. Pre-heat oven to 400*f/200*c
  2. Place chicken on parchment lined baking tray and set aside
  3. In a bowl, combine the remaining ingredients and mix well
  4. With a kitchen brush, evenly coat chicken with rub and roast for about 1 hour or so

 

Notes & Tips:
  • Makes 4-6 portions
  • Serve with Greek salad, rice or potatoes
  • Chili can be added for extra spice
  • Any mustard of choice can be used
