Easy Chicken & Rice Bake

  Ingredients List:

  • 4 chicken breasts
  • 1 onion
  • 2 garlic cloves
  • 1 tsp. cinnamon
  • 2 cloves
  • 1-1/2 cups crushed tomatoes
  • 2 cups rice
  • 4 cups water
  • 1/4 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. In a large pot brown chicken in olive oil  and set aside
  3. Chop and saute onion and garlic
  4. After 5 minutes, add cloves and cinnamon and continue to cook for 5 more minutes
  5. Now add the crushed tomatoes and water and bring to a simmer
  6. Add the rice into sauce and stir well
  7. Place chicken in rice sauce and bake uncovered for 30-40 minutes

 

Notes & Tips:
  • Makes 4-6 portions
  • Serve with Greek greens salad
  • Garnish with crumbled feta and parsley
  • Add optional chili for added heat
  • Any type of rice can be used
  • Any cut of chicken will work
