Easy Fasolakia | Greek Style Green Beans

  Ingredients List:

  • 1 onion
  • 2 garlic cloves
  • 1 sweet potato
  • 1 zucchini
  • 1 medium eggplant
  • 2 carrots
  • Chili (optional)
  • 1 tbsp. tomato paste
  • 1-1/2 cups crushed tomatoes
  • 4 cups green beans
  • Water as needed
  • 1 tbsp. fresh/frozen  basil
  • Bunch of parsley
  • 100g feta cheese (optional)
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. In a large pot, chop and brown onion and garlic in olive oil
  2. Once onions have softened (about 5 minutes) coarsely chop the remaining veggies and saute for 5 more minutes
  3. Add tomato paste and continue to cook for 5 more minutes
  4. Add crushed tomatoes and green beans
  5. Add enough water to just cover the veggies
  6. Bring to a boil, cover, reduce heat and simmer for about 20 minutes 

 

Notes & Tips:
  • Makes 4-6 servings
  • Serve with feta cheese and Greek crusty bread
  • Leftovers (if any lol) can be frozen
  • Add optional chili for added heat
  • Can be served on their own, over couscous. pasta or rice
