Easy Greek Sausage and Pepper Pasta Bake

Ingredients List:
- 1 lb. Greek orange pork sausage
- 450g short pasta
- 1/2 head cauliflower
- 1/4 cup Greek extra virgin olive oil
- 1/2 tsp. cinnamon
- 1 clove
- 1 onion
- Sriracha sauce or chili pepper (optional)
- 1 garlic clove
- 1 bell pepper
- 1 eggplant
- 1-1/2 cups crushed tomatoes
- 2 cups water
- 1 tsp. dried Greek oregano
- 300g spinach
- 300g feta cheese
- 80g kefalotyri (or similar)
- Salt & pepper to taste

Method:
- Cook pasta and chopped cauliflower to desired doneness
- Pre-heat oven to 450*f / 220*c
- Remove sausage from casing and brown in olive oil (see video)
- In a large saucepan, saute chopped onion and garlic until translucent
- Add cinnamon and clove
- Chop eggplant and bell pepper into 1/2" pieces and add to pan
- Saute for 5-6 minutes
- Add sriracha (optional)
- Add crushed tomatoes and water to saucepan and simmer for 10 minutes stirring occasionally
- Add oregano and stir
- In 13"x9" baking pan, add pasta, cauliflower and sauce and mix very well
- Crumble half the feta and kefalotyri and stir again
- Once pasta and sauce are mixed well, crumble the remaining feta and grate remaining kefalotyri over mixture
- Bake for 20-25 minutes or until G.B.D. (golden brown & delicious)

Notes & Tips:
- Allow to rest for 20-25 minutes before serving
- Makes 4-6 portions
- Substitute parmesan for kefalotyri if unavailable
- Can be easily frozen before or after baking
