Easy Karidopita | Greek Walnut Cake

Karidopita

  Ingredients List:

  • 3/4 cup butter
  • 1-1/2 cups sugar
  • 5 eggs
  • 3/4 cup milk
  • 3 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1-1/2 cups all purpose flour
  • 1 cup chopped walnuts

  • 2 cups water 
  • 2 cups sugar
  • 1 cinnamon stick
  • Rind of 1 lemon

 

     

    Method:

    1. Pre-heat oven to 350*f/165*c
    2. In a mixing bowl, combine softened butter and sugar and mix well
    3. Add eggs and continue mixing for 3 minutes
    4. In a glass, combine milk, baking soda, baking powder and stir well
    5. Once milk mixture froths, add to cake mixture and continue mixing (see video)
    6. Add cinnamon and flour and continue mixing for 3 minutes
    7. Add walnuts and mix for final 3 minutes
    8. Pour into 12" pan and spread evenly
    9. Bake at 350*f for 35-45 minutes or until toothpick test done
    10. Allow to completely cool prior to adding syrup
    11. In a small sauce pan, add water, sugar, cinnamon stick and lemon rind
    12. Bring to a rolling boil and simmer for 5 minutes
    13. Pour over karidopita and allow the cake to completely absorb the syrup
