Easy One-Pan Seafood Rice Bake

  Ingredients List:

  • 4 cups water
  • 2 cups rice
  • Pinch of saffron
  • 1 tsp. tomato paste
  • 3 green onions
  • 1/4 cup Greek extra virgin olive oil
  • 2 garlic cloves
  • Mixed frozen  seafood
  • 1 cup corn
  • 1 cup peas
  • 8 jumbo shrimp
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. In a small bowl add saffron & tomato paste to hot water, mix and set aside to steep
  3. In a large pan, chop and saute onions and garlic for 3 minutes
  4. Add seafood, peas & corn and cook for another 3 minutes
  5. Add rice and saffron water to pot and stir well to combine
  6. Place jumbo shrimp in pan
  7. Bake uncovered for 20-30 minutes 

 

Notes & Tips:
  • Makes 6-8 portions
  • Serve immediately
  • Garnish with parsley
