Easy Spanakopita Triangles
Ingredients List:
- 1-1/2 cups frozen spinach
- 1 cup crumbled feta cheese
- Small bunch of dill
- 1/3 cup Greek extra virgin olive oil
- 1 egg
- 5 phyllo dough sheets
- Salt & pepper to taste
Method:
- Preheat oven to 375* f
- In a bowl add spinach, crumbled feta cheese and dill
- Beat egg and add to spinach/feta mixture
- Add pepper to taste
- Stir to combine well
- Cut phyllo dough sheets into 2"-3" strips lengthwise
- Lightly brush phyllo strips with olive oil
- At one end of phyllo strips place approximately 1 tsp. of the spinach and feta mixture
- Slowly begin folding phyllo strip diagonally corner to corner (see video)
- Bake for 25-35 minutes at 375* or until golden brown and flaky
