Easy Taramasalata (Taramosalata suitable for Greek lent)

Ingredients List:
- 2 lbs. boiled potatoes
- 1 cup veg. oil
- Juice of 2 lemons
- 1 onion
- 1 cup caviar / carp roe

Method:
- Peel and boil potatoes
- Puree or grate onion and set aside
- In a mixer add potatoes and mix with paddle until smooth
- Add the veg. oil, lemon juice and onion and mix until well combined
- Add caviar/roe and mix well

Notes & Tips:
- Drizzle with Greek extra virgin olive oil before serving
- Garnish with Kalamata olives. lemon and/or parsley
- Serve with pita, crackers, bread or veggies
