Easy Tiropita - Greek Feta Cheese Pie

Ingredients List:
- 10 phyllo sheets
- 3 eggs
- 450g feta cheese
- 1/2 cup Greek extra virgin olive oil
- Pepper to taste

Method:
- Pre-heat oven to 350*f / 160*c
- In a bowl, crumble feta, add 4 tbsp. olive oil and eggs and mix well to combine. Set aside
- On a baking sheet, brush bottom with olive oil and place first phyllo sheet
- Brush with olive oil and continue for 4 more phyllo dough sheets (5 phyllo sheets total on bottom)
- Evenly spread feta cheese filling
- Repeat phyllo dough sheet for the top (remaining 5 phyllo sheets)
- Bake for approx. 45 minutes @ 350* until golden brown and flakey

- Serve with a side salad
- Makes 6-8 dinner portions
- Allow to rest for 15 minutes after baking
