Easy Vasilopita | Greek New Year's Cake

  Ingredients List:

  • 300g salted butter
  • 250g + 150g icing sugar
  • 1 tbsp. nutmeg
  • 2 tbsp. vanilla extract
  • 2 tbsp. sugar
  • 1 packet mahleb (7g)
  • 400g all purpose flour
  • 1 tbsp. baking powder
  • 4 eggs
  • 1/3 cup 2% milk
  • Zest of 2 oranges
 

Method:

  1. Pre-heat oven to 350*f/160*c
  2. In a large mixing bowl, add butter and icing sugar and mix for about 5 minutes
  3. Add sugar, nutmeg, baking powder  and mahleb and continue to mix
  4. Add eggs and continue mixing
  5. Add milk and mix for 3 more minutes
  6. Add the orange zest and vanilla and mix for 3 more minutes
  7. Slowly start adding the flour while continuing to mix
  8. Grease pan with butter
  9. Pour batter into baking pan
  10. Place coin in batter and smooth top
  11. Bake @ 350*f for 45-60 minutes
  12. Once cake has completely cooled sprinkle top with 150g  icing sugar

 

Notes & Tips:
  • If you can't find mahleb, simply double the nutmeg to 2 tbsp.
  • Bake in springform pan if possible. Easier to remove cake after baking
  • Almond slivers can be used to garnish cake instead of icing sugar
