Fettuccine with Feta & Avocado Pesto

fettuccine with feta & avocado pesto

  Ingredients List:

  • 450g fettuccine pasta
  • Bunch of basil
  • Bunch of parsley
  • 1 tbsp. minced garlic
  • 4 ripe avocados
  • Juice of 1/2 lemon
  • 150g feta cheese
  • 1/2 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Boil fettuccine to desired doneness
  2. In a food processor, add all the ingredients
  3. Puree until smooth and creamy
  4. In a large skillet, heat the avocado mixture and add the pasta
  5. Remove from heat and toss to thoroughly combine 

 

Notes & Tips:
  • Makes 4-6 servings
  • Serve immediately
  • Add chili flakes for optional added spice
  • Garnish with mizithra or kefalotyri cheese
