Fig & Honey Yogurt Cake

fig & honey yogurt cake

  Ingredients List:

  • 3/4 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup honey
  • 2 tbsp. brandy
  • Fresh figs
  • 1 cup all purpose flour
  • 3/4 cup cake flour
  • 2 tsp. baking powder
  • 1/4 cup Greek extra virgin olive oil
  • 2 eggs
  • 1/4 cup milk
  • 1 cup strained Greek yogurt
  • 1/3 cup sugar

Method:

  1. Pre-heat oven to 350*f/160*c
  2. In a sauce pan, add brown sugar, 1/4 cup butter, 1/4 cup honey and the brandy
  3. Heat until all ingredients have dissolved and totally combined
  4. Pour mixture into pan and spread to evenly coat bottom
  5. Half figs and place cut side down in pan and set aside
  6. In a bowl, add a/p flour, cake flour and baking soda and mix well with whisk and set aside
  7. In another mixing bowl, add olive oil, eggs, milk, yogurt and sugar and mix well
  8. Take bowl with dry ingredients and slowly add to wet ingredients  mixing constantly
  9. Once batter has been mixed, pour over pan with figs and spread evenly
  10. Bake for 45 minutes
  11. Once cake has finished baking, allow to stand for 10 minutes
  12. Place serving dish over pan and carefully flip cake onto dish (see video)   

 

Notes & Tips:
  • Makes 8-12 servings
  • Allow cake to stand for 10 minutes before flipping
  • Figs can be substituted for fruit of choice or season
  • DO NOT over mix batter
