  Ingredients List:

  • 1 cup sugar
  • 6 eggs
  • 1 tsp. vanilla
  • 1-1/2 cups fine semolina
  • Zest of 2 lemons
  • 8 cups milk
  • 1 cup butter
  • 10 phyllo sheets
 

Method:

  1. Pre-heat oven to 350*f
  2. In a mixing bowl combine 1 cup sugar and eggs and beat well
  3. Add vanilla, semolina, lemon zest and milk and continue mixing for 3-4 minutes
  4. Transfer custard mixture into pot and heat on medium heat until well thickened (about 15-20)
  5. Grease 9"x13" pan with butter
  6. Lay first phyllo sheet and baste with melted butter
  7. Repeat for the other 4 phyllo sheets that will make up the bottom
  8. Pour thickened custard into pan and spread evenly
  9. Repeat method for the top 5 phyllo sheets buttering in between
  10. Lightly score the top phyllo sheets into desired pieces before baking
  11. Bake @ 350* for 45-60 minutes or until golden brown and delicious
  12. In a sauce pan combine 1 cup sugar, 1 cup water and the lemon juice, bring to a boil stirring frequently and simmer for 5 minutes
  13. Pour over galaktoboureko slowly until completely absorbed
